
Ingredients:
• 250 gms – spinach, chopped
• 1 cup – shredded Swiss cheese
• 1/2 cup – grated parmesan cheese
• 1 cup – Milk
• 1/2 cup – Butter
• 1 cup all-purpose flour
• 4 eggs
• 1 tsp – salt
Method:
- In a saucepan boil over medium heat the milk, butter and salt.
- Add the flour and stir until a smooth ball forms.
- Remove from the heat.
- Let it stand for five minutes.
- Add eggs, one at a time, beating well after each addition.
- Continue beating until the mixture is smooth and shiny.
- Stir in spinach and cheese.
- Line baking sheets with foil and grease the foil.
- Drop batter using a tablespoon 1-1/2 inches apart onto prepared baking sheets.
- Bake at 375 degrees F for 23 to 28 minutes or until puffed and golden brown.
- Remove to wire racks to cool. Serve warm.
- Refrigerate any leftovers.
