
Ingredients:
• 4 cup – spinach, finely chopped
• 3 cup – water or vegetable stock
• 100 g – button mushroom, sliced
• 1 cup – Milk
• 1/2 cup – cooked sweet Corn kernels
• 2 tbsp – Butter
• 2 tsp – garlic, minced
• 1 tsp – ginger, minced
• salt and pepper to taste
• Cream to garnish
Method:
- Heat the butter and fry garlic and ginger till fragrant.
- Add spinach and mushroom.
- Stir well and add water or stock.
- Simmer till the vegetables are cooked.
- Cool and blend till smooth.
- Add salt, pepper, milk and corn kernels. Heat thoroughly.
- Swirl some cream on top and serve hot.
