Ingredients:

• Spinach leaves (whole, washed thoroughly)
• 1 tsp – Ginger (finely grated)
• 100 g – Tofu (small pieces, lightly fried)
• 2 tbsp – grated copra (lightly roasted)
• 2 tbsp – Peanuts (roasted)
• 1/2 – Onion (finely chopped)
• 1 tbsp – Lemon juice
• 1 tsp – Tamarind juice

Method:

  1. Mix all the ingredients together and keep aside.
  2. Take a spinach leaf and fold it to make a samosa-like pocket.
  3. Add the stuffing and close it tight. Your spinach pocket is ready.
