Ingredients:
• 30 oz. – fresh Spinach
• 1 lb. or 8 oz. – Cottage cheese
• 2 – medium onions, sliced
• 3 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Ginger powder
• 1 tsp or according to your taste – Garam Masala powder
• 1/2 tsp – Jeera powder
• 1 tsp – Jeera and Mustard Seeds
• salt, Jaggery and oil
• pinch of Hing
Method:
- Heat oil in a pan.
- When it is hot, add a pinch of hing and jeera, mustard seeds.
- When sizzled, add chopped onion and fry till nice and translucent.
- Now, add spinach and all the spices and keep frying. Let it cook.
- When done, add salt and jaggery and stir till the jaggery has melted.
- Switch off the heat, add all of the cottage cheese and mix nicely.
- Serve with chapatti or paratha.
