Ingredients:

• 30 oz. – fresh Spinach
• 1 lb. or 8 oz. – Cottage cheese
• 2 – medium onions, sliced
• 3 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Ginger powder
• 1 tsp or according to your taste – Garam Masala powder
• 1/2 tsp – Jeera powder
• 1 tsp – Jeera and Mustard Seeds
• salt, Jaggery and oil
• pinch of Hing

Method:

  1. Heat oil in a pan.
  2. When it is hot, add a pinch of hing and jeera, mustard seeds.
  3. When sizzled, add chopped onion and fry till nice and translucent.
  4. Now, add spinach and all the spices and keep frying. Let it cook.
  5. When done, add salt and jaggery and stir till the jaggery has melted.
  6. Switch off the heat, add all of the cottage cheese and mix nicely.
  7. Serve with chapatti or paratha.
