
Ingredients:
• 6-8 Brinjals
• 3 – Green chillies
• 1/2 tsp – Jeera
• small piece – Ginger
• 3/4 of a bunch – Coriander leaves
Method:
- Grind all the ingredients, except the brinjals, with a little water. Keep aside.
- Cut the brinjals in four, leave the stem attached.
- Stuff the brinjals with the paste.
- Heat a little oil, add a little salt and a pinch of turmeric powder, then add the brinjals and fry them on high heat for 5-6 minutes.
- Then reduce the flame, cover and cook for some time, until the brinjals soften – around 10-15 mins.
- The stuffed brinjals are ready to serve.
