
Ingredients:
• 3 – large Sweet Potatoes
• 4 – large carrots, peeled and chopped into big chunks
• 1 tsp – chopped Mint
• 1/2 tsp – all spice powder or Garam Masala
• 1 tsp – chilli powder
• salt and pepper to taste
• 2 tsp – Lime juice
• 2 tbsp – Butter
• 3 tbsp – grated cheese
Method:
- Boil the sweet potatoes, remove the skin and cut into thick slices.
- Arrange the slices together with the chopped carrots in a buttered baking dish.
- Sprinkle salt, pepper, chilli powder, mint, lime juice and spice powder over the carrots and potato slices.
- Dot with butter all over and spread the grated cheese on top.
- Bake in a moderate oven (355 degrees Fahrenheit) for 20-25 minutes.
- Serve hot with any other meat dish and bread.
