Ingredients:

• Tomatoes – 1/2 kg
• Sugar – 200 g
• Paanch Phoron – 1/2 tsp
• Salt – a pinch
• Cooking oil – 1/2 tbsp

Method:

  1. Cut the tomatoes in small cubes. No need to take out the seeds.
  2. Heat the oil in a pan. When smoking hot, throw in the paanch phoron. Let it splutter.
  3. Then throw in the tomatoes and stir fry for a minute. Sprinkle salt, cover and cook for 5 mins.
  4. Remove cover, mash the tomatoes with the back of a large spoon.
  5. Add sugar and cook uncovered for about 7 mins.
