Ingredients:
• Tomatoes – 1/2 kg
• Sugar – 200 g
• Paanch Phoron – 1/2 tsp
• Salt – a pinch
• Cooking oil – 1/2 tbsp
Method:
- Cut the tomatoes in small cubes. No need to take out the seeds.
- Heat the oil in a pan. When smoking hot, throw in the paanch phoron. Let it splutter.
- Then throw in the tomatoes and stir fry for a minute. Sprinkle salt, cover and cook for 5 mins.
- Remove cover, mash the tomatoes with the back of a large spoon.
- Add sugar and cook uncovered for about 7 mins.
