
Ingredients:
• 1/2 kg – tender ladyfingers/okra
• 1 cup – Tamarind juice
• 2 tsp – chilly powder
• 1 tsp – Turmeric powder
• 1 tsp – Ginger and Garlic paste
• few Curry leaves
• salt to taste
• 2 tsp – oil
• 1 tsp – cumin powder
• 2 tbsp – Sugar
• 2 – onions, chopped
Method:
- Wash the ladyfingers and cut them into medium sized pieces.
- Heat oil in pan and fry the onions till they turn light brown.
- Add ginger and garlic paste and saute for a few minutes.
- Add the chilly powder, cumin powder, curry leaves, turmeric powder and cumin powder. Fry for some time.
- Add the cut lady’s fingers and mix well.
- Keep frying for a few minutes.
- Now add the salt, sugar and tamarind juice. Simmer on low heat till the lady’s fingers/okra is cooked and the gravy is thick.
- Serve as a side dish with rice or chapattis.
