Ingredients:

• 1/2 kg – tender ladyfingers/okra
• 1 cup – Tamarind juice
• 2 tsp – chilly powder
• 1 tsp – Turmeric powder
• 1 tsp – Ginger and Garlic paste
• few Curry leaves
• salt to taste
• 2 tsp – oil
• 1 tsp – cumin powder
• 2 tbsp – Sugar
• 2 – onions, chopped

Method:

  1. Wash the ladyfingers and cut them into medium sized pieces.
  2. Heat oil in pan and fry the onions till they turn light brown.
  3. Add ginger and garlic paste and saute for a few minutes.
  4. Add the chilly powder, cumin powder, curry leaves, turmeric powder and cumin powder. Fry for some time.
  5. Add the cut lady’s fingers and mix well.
  6. Keep frying for a few minutes.
  7. Now add the salt, sugar and tamarind juice. Simmer on low heat till the lady’s fingers/okra is cooked and the gravy is thick.
  8. Serve as a side dish with rice or chapattis.
