
Ingredients:
• 1 cup – Frozen Corn kernels
• 1 cup – Water
• 2 tbsp – Sugar
• 2 tsp – Tapioca flour
• 2 tbsp – Coconut Cream (do not shake the can of Coconut Milk before opening, spoon out the thick Cream on top)
• A pinch – Salt
Method:
- Boil water, sugar and corn kernels together.
- Make a fine paste with tapioca flour and water.
- Once the sugar dissolves, add this paste to the corn. Stir it continuously until it thickens.
- Mix the coconut cream and salt together and bring to a boil over low heat.
- Top the sweet corn mix with the coconut cream.
- Serve chilled.
