Ingredients:

• 1 slab – quick cooking noodles
• 3 sprigs – green Onions
• 3-4 Cloves – garlic, chopped
• 1 – chopped fine, Green chillies
• 1, finely chopped, Carrot
• 1/2 cup – finely chopped, Cabbage
• 1/2 tsp – black pepper powder
• 1 tsp – Red Chilli sauce
• 2 tbsp – dark soya sauce
• 2.5 cups + 3 tsp – water
• 1 tbsp – Corn flour
• Salt to taste
• 1 tbsp – oil for soup
• Oil to deep fry the noodles.

Method:

  1. Cook noodles as per the instructions given in the noodles pack. Drain the cooked noodles and set aside.
  2. Deep fry them in oil till they are crisp. Remove excess oil by placing them on kitchen towel.
  3. In a pan add 1 tbsp. oil, when hot add spring onion, garlic, green chillies and saute on high flame.
  4. Now add carrots and cabbage and saute.
  5. Then add dark soya sauce, red chilly sauce to it and saute.
  6. Then add 2.5 cups of water, salt and black pepper powder and mix well and bring it to boil.
  7. Now prepare a lump free mixture of corn flour with 3 tsp. of water and add it to the boiling soup with continuous stirring.
  8. Add more spring onion greens and transfer it to serving bowl.
  9. Serve by adding crushed fried noodles on top.
