
Ingredients:
• 2 cups – Watermelon white rinds (chopped)
• 1 cup – Toor Dal
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 1 tsp – coriander powder
• 1 tsp – sambar powder
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Garam Masala powder
• 1 tsp – Mustard Seeds
• 1 tsp – Urad Dal
• 2 – dry Red Chillies
• 1 – Cinnamon stick
• salt to taste
• oil for frying
• a few Curry leaves
• To grind: 1 tsp – Fennel seeds
• 2 tbsp – grated Coconut
Method:
- Grind the fennel seeds and grated coconut into a fine paste.
- In the meantime, pressure-cook the toor dal with turmeric powder and keep aside.
- Heat enough oil in another pressure cooker and fry the mustard seeds, urad dal, dry red chillies and cinnamon stick.
- Add the chopped onion, curry leaves and chopped tomato immediately and saute until the vegetables turn mushy.
- Add the chopped watermelon pieces and saute for a few minutes.
- Add the cooked dal along with coriander powder, sambar powder, garam masala powder and salt and bring to boil.
- Add the paste, cover and cook until the vegetables are done well.
- Serve hot with rice.
