Ingredients:
• 2 cups – flour
• 4 oz or 2 tbsp – Butter
• 3/4 cup – Sugar
• 1/2 cup – Raisins
• 1/4 cup – yogurt or 2 eggs
• Milk if needed
• 1/4 tsp – Cinnamon powder
• 1/4 tsp – Nutmeg powder
• 1/2 tsp – baking powder
• Currants – 1/2 to 1 cup
Method:
- Mix butter and flour well.
- Add sugar, currants, cinnamon powder, nutmeg powder and baking powder.
- Add yogurt and milk to make a soft dough.
- Roll out on a floured surface, to a thickness of 1/8 inch.
- Cut into rounds using cookie cutter.
- Set electric frying pan to 350 degrees or if using a stovetop frying pan cook over medium.
- Melt some butter and spread over the surface of the pan.
- Place the cookie rounds on the pan.
- Cook until the top sides start to dry out.
- Flip the cookies and continue to cook until light golden.
- Place the cookies on the cooling rack and sprinkle white sugar or fruit sugar over them.
- Serve hot or cold.
