Ingredients:
• 1 pound – whole-grain Pasta
• 1 cup – Olives (cut into rings)
• 2 cups – green beans (cooked)
• 3 tbsp – roasted Sunflower seeds
• For the pesto:
• 4 cups – baby Spinach
• 1/4 cup – Cashew nuts
• 4 Cloves – Garlic (smashed)
• 1/4 cup – extra virgin Olive oil
• 1 tbsp – white miso
Method:
- Cook the whole-grain pasta in plenty of salted water as per the package instructions until al dente.
- Place all pesto ingredients in a food processor and process until everything’s broken down into a rough paste
- Place the pesto and pasta in a bowl, and add all the vegetables and sunflower seeds. Add salt. Mix together thoroughly and serve.
