Ingredients:

• 2 cups – medium-thin Poha (flattened rice)
• 1 cup – boiled and cubed Potatoes
• 1 cup – chopped Capsicum
• 1/2 cup – chopped Onions
• 1/2 cup – chopped Tomatoes
• 1/2 cup – chopped coriander
• 2.5 tbsp – Lemon juice
• 1/2 tsp – Sugar
• Salt
• 1/2 tsp – Turmeric powder
• 1 tsp – Mustard Seeds
• A big pinch – Hing
• Oil

Method:

  1. Rinse poha well and keep aside for 10 minutes.
  2. Heal oil in a kadai and add mustard seeds and hing.
  3. Let it splutter well. Add chopped capsicum and onions.
  4. Saute it for a while and add potatoes and poha.
  5. Add salt, sugar, turmeric powder and lemon juice and mix well.
  6. Garnish with chopped coriander, tomatoes and serve hot.
