Ingredients:

• 100 gms – Brinjal (de-skinned, roasted and finely chopped)
• 1 tbsp – chopped Onions
• 1 tbsp – Dahi
• 1 tbsp – ginger-garlic paste
• 1 pinch – cumin
• 1 pinch – rai (mustard seed)
• 1tbsp – chopped coriander
• 1tbsp – Red Chilli
• 1 pinch – Haldi powder
• 1 pinch – dhania/coriander powder
• 1 pinch – salt for taste
• 1 pinch – chat masala
• 1 tbsp – fresh Tomato ketchup
• 1/2 tbsp – oil

Method:

  1. Heat oil in a pan, add rai and cumin and wait till they crackle.
  2. Add chopped onions and saute till it becomes brown.
  3. Add ginger-garlic and dahi.
  4. Stir for 2 mins.
  5. Now add rest dry masalas including salt and tomato ketchup.
  6. Mix the ingredients and ensure the masala is cooked.
  7. Add the roasted chopped brinjal and mix well.
  8. Cook for 2- 3 mins more.
  9. Add coriander to garnish.
  10. Place the sabji on paratha and roll.
