Ingredients:

• 3 large -brinjal
• 1 tbsp – Onions
• 1 tbsp – Curd
• 1 tbsp – Ginger Garlic paste
• 1 pinch – cumin
• 1 pinch -mustard
• 1 tbsp – coriander
• 1 tbsp – Red Chilli
• 1 pinch – Turmeric powder
• 1 pinch – coriander powder
• salt to taste
• 1 pinch – chat masala
• 1 tbsp – Tomato ketchup
• 1/2 – tbsp oil

Method:

  1. Cut the brinjal into thin slices and roast.
  2. Splutter mustard in oil and add cumin.
  3. Add chopped onion and saute till brown
  4. Add ginger, garlic, curd and stir.
  5. Add dry masalas, salt and tomato ketchup and cook well
  6. Add the roasted chopped brinjal and mix well
  7. Cook for 2- 3 mins
  8. Garnish with coriander.
