Ingredients:
• 500g – boneless Chicken breast
• For the marinade:
• 3 tbsp – Lime juice
• 1 tsp – white Vinegar
• 1 tbsp – Olive oil
• 1 tsp – Sugar
• 1 tbsp – crushed Garlic
• pepper – to taste
• salt – to taste
• For the salad:
• 5 tbsp – chopped Cucumber
• 4 tbsp – finely chopped Spring onions
• 3 tbsp – chopped red Capsicum
• 2 tbsp – chopped fresh coriander
• 1 tbsp – chopped Raw Mango
• 1 tsp – Lime juice
• 1/2 tsp – Oregano
• salt to taste
Method:
- Cut the chicken into very thin pieces and thread onto the skewer.
- Mix together all the ingredients to form a marinade.
- Add the chicken to the marinade and keep aside for 30 minutes.
- Preheat the grill to 180 degree C.
- Arrange the chicken kebabs on the grill rack, and grill it for 5 minutes.
- Turn the chicken over, brush with the marinade again, and grill till the chicken is done.
- Meanwhile, mix all the ingredients of the salad.
- Serve immediately with hot chicken kebabs.
- You can also serve this with a small bowl of brown rice to make it a complete meal.
