Ingredients:

• 500g – boneless Chicken breast
• For the marinade:
• 3 tbsp – Lime juice
• 1 tsp – white Vinegar
• 1 tbsp – Olive oil
• 1 tsp – Sugar
• 1 tbsp – crushed Garlic
• pepper – to taste
• salt – to taste
• For the salad:
• 5 tbsp – chopped Cucumber
• 4 tbsp – finely chopped Spring onions
• 3 tbsp – chopped red Capsicum
• 2 tbsp – chopped fresh coriander
• 1 tbsp – chopped Raw Mango
• 1 tsp – Lime juice
• 1/2 tsp – Oregano
• salt to taste

Method:

  1. Cut the chicken into very thin pieces and thread onto the skewer.
  2. Mix together all the ingredients to form a marinade.
  3. Add the chicken to the marinade and keep aside for 30 minutes.
  4. Preheat the grill to 180 degree C.
  5. Arrange the chicken kebabs on the grill rack, and grill it for 5 minutes.
  6. Turn the chicken over, brush with the marinade again, and grill till the chicken is done.
  7. Meanwhile, mix all the ingredients of the salad.
  8. Serve immediately with hot chicken kebabs.
  9. You can also serve this with a small bowl of brown rice to make it a complete meal.
