Ingredients:

• 1/4 cup – butter, melted
• 1 cup- Coconut Sugar
• 1/3 cup -cold water
• 4 -large Egg whites
• 1 -large whole Egg
• 3 tbsp -canola oil
• 1 tsp -vanilla
• 1.25 cups -whole Wheat pastry flour
• 1/2 cup -unsweetened cocoa powder
• 1 tsp -baking powder
• 1/4 tsp -ground Cinnamon
• 1/8 tsp- salt
• 1/8 tsp -Kashmiri chilli powder
• 1/3 cup -chopped bittersweet chocolate
• 2 tbsp- hot strong coffee (optional)

Method:

  1. Preheat oven to 350 degrees F. Lightly grease a brownie pan and set aside.
  2. In a bowl, add the melted butter.
  3. Whisk in the sugar and water.
  4. Whisk in eggs, oil, and vanilla. Stir in flour, cocoa powder, baking powder, cinnamon, salt, and chilli powder. Mix well.
  5. Stir in the chocolate pieces.
  6. Pour batter into the prepared pan.
  7. Bake for 23 to 25 minutes or until a wooden toothpick inserted near the centre comes out clean. Cool in pan for 10 minutes.
  8. Remove from pan by lifting up the foil. If you are using the strong coffee, brush the hot brownie with it. Let this cool completely.
  9. Cut into bars and sprinkle with powdered sugar and/or cinnamon-sugar.
