Ingredients:

• 1kg – pork, cut into medium-size pieces
• 2 tbsp – Vinegar
• 1 tbsp – Worcester sauce or soya sauce
• 2 tbsp – Tomato sauce
• 3 tbsp – oil
• 3 large – sliced Onions
• 2 tbsp – chopped Garlic
• 2 tbsp – chopped Ginger
• 8 to 10 – Curry leaves
• 1 tsp – powdered Fenugreek seeds
• 1 tsp – mustard powder or paste
• 2 pieces – Cinnamon
• 3 – Cloves
• 3 tsp – chilli powder
• 1 tsp – Turmeric powder
• salt
• 2 tbsp – oil

Method:

  1. Marinate the pork with vinegar, Worcester/ soya sauce, tomato sauce, sugar and salt for about 1 hour.
  2. Heat oil in a pressure cooker or pan and saute the onions, curry leaves, chopped ginger, chopped garlic, cinnamon and cloves till they are light brown in colour.
  3. Add the marinated pork, chilli powder, turmeric powder, fenugreek powder and mustard and mix it well.
  4. Let it simmer for a few minutes till the meat becomes firm.
  5. Add sufficient water and pressure cook it for about 15 to 20 minutes till the pork is cooked.
  6. Open the pressure cooker and simmer till the gravy is thick.
