Ingredients:

• eggs – 2, large, separated
• Milk – 250 ml
• Butter – 25 gm
• Cinnamon powder – 1 tsp
• white bread crumbs – 75 gm
• Sugar – 75 gm
• Orange marmalade – 3 tbsp
• extra Sugar to sprinkle on top

Method:

  1. Heat the milk till warm.
  2. Remove from fire.
  3. Add butter and stir till butter is melted.
  4. Add 1/3 the sugar and stir till dissolved.
  5. Add cinnamon powder.
  6. Place the bread crumbs in a mixing bowl and pour the milk over it.
  7. Leave aside to soak for 30 minutes.
  8. Stir the egg yolks into the bread mixture.
  9. Pour the mixture in a greased baking dish.
  10. Bake in oven (160 degrees centigrade) till set (About 30 mins).
  11. Beat the egg whites till stiff.
  12. Beat in the remaining sugar, little at a time.
  13. Spread marmalade over the set pudding.
  14. Cover completely with the meringue and sprinkle with a table spoon of sugar. Return to the oven till the meringue turns pale brown.
  15. Serve the pudding warm.
