Mushroom Pepper Fry

Ingredients:

• Button or Oyster Mushroom – 200 g
• Coriander seed – 1 tbsp
• Pepper – 1 tsp
• Fennel – 1 tbsp
• Grated Coconut – 1/3 cup
• Red Chilli – 5-6
• Garlic – 6 flakes
• Ginger – small piece
• Oil – 4 tbsp
• Cinnamon – 2 pieces, 2 cm each
• Onion – 1 cup, chopped
• Tomato – 1 cup, chopped
• Salt to taste

Method:

  1. Clean and cut the mushrooms into quarters.
  2. Roast the coriander seeds, pepper, fennel seeds, coconut, red chillies, garlic and ginger in a little oil and grind to a smooth paste.
  3. Heat oil in a pan and add the cinnamon pieces and chopped onions.
  4. When the onions turn brown, add the paste and the tomatoes and fry well.
  5. Add the mushrooms and salt.
  6. Cover and cook on slow flame for about 10 mins until the mushrooms are tender.
  7. Serve with rice or roti.
