Ingredients:

• 1 kg – large Prawns
• 1/2 cup – Butter
• 1 – Onion
• 1.5 cup – Rice
• 1 cup – grated cheese
• 8 cups – stock
• salt

Method:

  1. Melt 4 tbsp butter. Add chopped onion and cook till it turns colour.
  2. Add rice and fry for a couple of minutes.
  3. Add stock a little at a time and cook the rice.
  4. Melt 2 tbsp butter and add boiled prawns. Saute. Add to rice.
  5. Add remaining melted butter and grated cheese.
  6. Mix well.
