Ingredients:

• 200 g – paneer, sliced into fingers
• 2 – oranges, segments peeled, deseeded
• 1 – sweet lime, segments peeled
• 1 – small yellow Capsicum
• 1 – small red Capsicum
• 2 – Lettuce leaves, shredded coarsely
• 1 tsp – sesame seeds, lightly roasted
• 1 tbsp – peanuts, roasted crushed
• Mix together in a small bowl:
• 1 – very small green chilli, finely crushed
• 1 tiny flake – garlic, crushed
• 1 stalk – Lemon grass, very finely chopped
• 5 to 6 – Basil leaves, finely chopped
• 5 to 6 – Mint leaves, finely chopped
• 1 tsp – Lemon juice
• 1/2 tsp – Lemon rind grated
• 1 tsp – Sugar
• 1 tsp – Olive oil
• Salt to taste
• Pepper to taste

Method:

  1. Cut capsicums into thin slivers.
  2. Put all the fruits, veggies and paneer in a large salad bowl.
  3. Chill for half an hour.
  4. Whisk dressing mixture very well.
  5. Add seeds and nuts to fruit.
  6. Pour dressing over it.
  7. Toss lightly with fork.
  8. Serve crisp and cold.
