Ingredients:

• 1 – medium tender green Cabbage shredded
• 1 – Potato boiled, chilled and chopped
• 2 – medium carrots, grated
• 1/4 cup – chopped Capsicum
• 1/2 cup – chopped Spring onion
• 1 stick – Celery chopped
• 1 sprig – Mint leaves plucked and chopped finely
• 1/4 cup – Olive oil
• Salt to taste
• 1/2 tsp – pepper powder
• 2 tbsp – Lemon juice

Method:

  1. Mix all vegetables except mint and celery, chill in in a large glass bowl.
  2. Mix oil, lemon juice, salt, pepper, mint and sugar till well blended.
  3. Pour dressing over chilled vegetables
  4. Toss it well.
  5. Refrigerate for 1 hour
  6. Garnish with celery before serving.
