Ingredients:

• 1 cup – chopped boiled vegetables such as peas, carrots, French beans etc
• 3 – Potatoes boiled and mashed
• 2 – Onions chopped finely
• 2 – Green chilli chopped
• 1 tsp – chopped Mint
• 1 tsp – finely chopped, Ginger
• 1/2 tsp – pepper powder
• Salt to taste
• 3 tbsp – oil
• 1- Egg beaten
• 3 tbsp – breadcrumbs.

Method:

  1. Heat oil in a pan and fry the onions and ginger till golden brown.
  2. Add the chopped green chillies and saute for a few minutes.
  3. Now add the cooked vegetables, salt, and mix well.
  4. Cook on low heat for about 5 minutes, then set aside to cool for some time.
  5. Now mix in the mashed potato and mint.
  6. Make even sized balls with the mixture and form into round cutlets.
  7. Heat oil in a flat pan.
  8. Dip each patty in beaten egg, roll in powdered breadcrumbs and shallow-fry till golden brown on both sides.
  9. Serve hot with tomato sauce.
