Ingredients:

• 2 cups – Rice (preferably long grained), soaked for 20 mins
• 2 – small onions, diced
• 2 – medium-sized tomatoes, cut into cubes
• 1 inch – ginger, grated
• 1 – capsicum, cut into small pieces
• 4 cups – water
• 1.5 cups – freshly cut vegetables (Cauliflowers, French Beans, Carrots, Green Peas)
• Oil to cook
• Homemade badies:
• Cumin seeds – 1/2 tsp
• Coriander Powder – 1 tsp
• Salt To taste
• Turmeric powder – 1/2 tsp
• Green chillies 2 – 3
• Garam Masala – 1 tsp

Method:

  1. Heat oil in a pan or a cooker. Put cut green chillies into the oil. Add cumin seeds and let it splutter.
  2. Add mixture for homemade badies into the oil and fry till it gets brown.
  3. Now add ginger to the pan and fry it till it becomes lightly transparent.
  4. Add the diced onions and let it become transparent.
  5. Add the freshly cut vegetables and fry it.
  6. Add soaked rice into the pan and stir it. Then immediately add coriander powder, salt, turmeric powder, garam masala and stir it for the next 5-7 mins.
  7. Add capsicum and tomatoes at this stage. Stir for another 2 mins.
  8. Then add 4 cups of water and cook till the water evaporates or the way the rice is cooked.
