Ingredients:

• 6 – eggs
• A pinch – Turmeric powder
• 12 bundles – Fenugreek leaves
• 3 – onions, finely chopped
• Oil
• 1 tbsp – grated Coconut
• Salt to taste

Method:

  1. Chop the fenugreek finely
  2. Heat the oil and fry the onions lightly, stirring constantly.
  3. Add the fenugreek and salt to taste. Stir well then add 1 cup of water and simmer. When the water has evaporated, add the coconut and turmeric powder.
  4. Stir well, add 1/2 cup water and simmer for 5 mins.
  5. Beat the eggs lightly and add to the fenugreek.
  6. Cook until the eggs set, stirring constantly
  7. Serve immediately
