Ingredients:

• 1 bunch – Palak (spinach) or any greens
• 1 – Green chilli
• 3 cups – yogurt (curd) or fresh, thick buttermilk
• 1/2 tbsp – oil
• 1/2 tsp – Jeera (cumin seeds)
• 1/2 tsp – (optional) Red Chilli powder
• Salt to taste

Method:

  1. Cut and boil the greens in water till they are cooked. Grind the greens in a mixie with the green chillies and a little water till they are totally liquefied.
  2. If you are using curd, add the curd to the greens before grinding.
  3. Pour out the liquid from the mixie into a vessel. If you are using buttermilk, add it now.
  4. Add salt to taste.
  5. In a small pan, heat oil. Add cumin seeds and wait for a few minutes till they get roasted.
  6. Add red chilli powder to the oil, if you prefer.
  7. Pour the contents of the pan into the raita.
