Ingredients:
• 8 pieces – Chicken
• 2 – large onions, thickly sliced
• 1/2 cup – Orange juice
• 1 tbsp – Butter
• Salt and pepper to taste
• For sauce:
• Drippings from the roasted Chicken
• 1 cup – Orange juice
• 1/2 cup – Orange peel, boiled and drained
• 1/2 cup – any jam
• 1/4 cup – Brown sugar
• 2 tbsp – Corn flour
Method:
- Chop onion, mix with orange juice, butter, salt and pepper. Mix the chicken well in this and marinate for an hour.
- Roast in a pre-heated oven at 160 C for 20-25 mins.
- Joint the roasted chicken. Lay the pieces on a flat plate.
- Meanwhile, combine the sauce ingredients. Bring to a boil.
- Pour the sauce over the chicken.
- Heat thoroughly before serving.
- Serve with garlic bread.
