Ingredients:
• 450 g – Tomatoes
• 100 g – feta cheese
• 1 small green pepper
• For Dressing:
• 1/2 Cucumber
• 12 black Olives
• 4 Spring onions
• 3 tbsp – Olive oil
• 1 tbsp – Lemon juice
• salt and pepper
• chopped fresh or dried Oregano
Method:
- Cut cheese into small cubes.
- Thinly slice tomatoes.
- Slice pepper finely, discarding seeds, core and stem end. Stone olives.
- Discard root from onions, cut into thick slices.
- Peel and cut cucumber into chunks.
- Place all salad ingredients in a bowl.
- Combine oil, lemon juice, salt and pepper and oregano.
- Pour over salad and serve at once.
