Ingredients:

• 450 g – Tomatoes
• 100 g – feta cheese
• 1 small green pepper
• For Dressing:
• 1/2 Cucumber
• 12 black Olives
• 4 Spring onions
• 3 tbsp – Olive oil
• 1 tbsp – Lemon juice
• salt and pepper
• chopped fresh or dried Oregano

Method:

  1. Cut cheese into small cubes.
  2. Thinly slice tomatoes.
  3. Slice pepper finely, discarding seeds, core and stem end. Stone olives.
  4. Discard root from onions, cut into thick slices.
  5. Peel and cut cucumber into chunks.
  6. Place all salad ingredients in a bowl.
  7. Combine oil, lemon juice, salt and pepper and oregano.
  8. Pour over salad and serve at once.
