Ingredients:

• 1 tsp – baking powder
• 80 g – cocoa powder
• 100 ml – cooking oil
• 8 – eggs
• 1 tsp – vanilla essence
• 800 g – Maida flour (refined)
• 300 g – Butter
• 1/2 tsp – soda bi-carbonate
• 400 g – sugar, browned

Method:

  1. Grease the cake tin with oil and dust with flour.
  2. Sieve in the flour, cocoa and baking powder.
  3. Cream the butter, oil and soda bicarb.
  4. Blend and add the sugar and whisk until light and fluffy.
  5. Add 2 eggs at a time, whisking well after each addition.
  6. Add the flour, then the vanilla essence and beat well.
  7. Pour onto the prepared tin.
  8. Bake in a preheated oven until done.
  9. When the cake cools, wrap in the pan with foil. Sandwich the cake with cocoa butter cream.
