Ingredients:

• 3 slices – bread with the edges trimmed off
• 2 large – Potatoes boiled, peeled and mashed
• 2 tbsp – semolina or rava
• 3 tbsp – Tomato sauce
• 2-3 tbsp – Butter or margarine
• 2 tbsp – oil
• For the green chutney:
• 1/2 cup – Coriander leaves
• 2 – Green chillies
• 5 tsp – fresh or desiccated Coconut
• 1 inch – Ginger
• Salt – to taste
• Sugar – to taste

Method:

  1. Make the green chutney by processing all the ingredients required for the chutney in a blender.
  2. Use a bit of water if required but make sure the chutney is not too watery.
  3. It should be of spreadable consistency.
  4. Take a slice of bread, spread butter and the green chutney on it.
  5. Take another slice of bread, butter it on both sides, and spread tomato sauce on the top of the second slice.
  6. Place the second slice on top of the first.
  7. Take the last slice of bread, spread butter and chutney on it and put it face down on the second slice.
  8. Now gently coat the entire sandwich with mashed potato from all sides and enclose the sandwich completely (like a box).
  9. Roll the ‘box’ in semolina and shallow fry it on a griddle with a little oil.
  10. Be careful when turning it over as the potato coating may come off.
  11. Shallow fry till the potato coating starts turning brown.
  12. Then cut the ‘box’ along the diagonals and serve hot with sauce or chutney.
  13. The sandwich looks stunning because of the green and red colours. You may increase the number of layers and fillings as you like.
