Ingredients:
• fine grain Rice – 2 cup
• grated Coconut – 2 cup
• Curry leaves – few
• black pepper Corns – 1 tsp, crushed
• Turmeric leaves – 2
• Coriander leaves to garnish
• salt to taste
Method:
- Wash the rice and drain.
- Grind coconut with 2 cups of water and extract the milk.
- Add 1 cup of water to residue and extract the second milk.
- Combine the first and second milk.
- Measure and add enough water to make it 4 cups.
- Add the coconut milk to the rice in a non-stick pan.
- Add rest of the ingredients.
- Cover and simmer gently till the liquid is absorbed and the rice is cooked.
- Garnish with corainder leaves
