Ingredients:
• 2 – apples (about 1/2 kg)
• 2 tbsp – chopped nuts, Raisins etc.
• 1 tbsp – castor Sugar
• 1 tbsp – Butter
• For the meringue:
• 1 – Egg white
• 1 tbsp – castor Sugar
• Thin Sugar syrup or unsweetened fruit juice to bake the apples
Method:
- Peel the apples and remove the lid by slicing horizontally from the top.
- Make a hollow by scooping out seeds and pulp with the help of a knife.
- Arrange apples in a deep dish with hollow side up.
- Mix together nuts and sugar and fill the cavity of each apple with the mixture.
- Dot the lids of the apples with butter.
- Pour sugar syrup or fruit juice in the dish to a depth of half inch and cover and bake in a microwave oven at 180 degrees for about 40 minutes or till tender..
- Remove from oven and cool.
- Beat together egg white until frothy. Gradually beat in castor sugar, beat till rounded peaks are formed.
- Pile this meringue on the apples and bake at 180 degree C for 10-15 minutes or until meringue is delicately browned.
