Ingredients:
• 2 cups – Basmati Rice
• 3.5 cups – Water
• 1 cup – Carrots chopped
• 1 cup – Spinach green (chopped finely)
• 1 tsp – Ginger pieces (minced)
• 1 tsp – Garlic pieces (minced)
• 1 tbsp – Dark soya sauce
• 1 tbsp – Chilli Sauce
• 1 tbsp – Tomato ketchup
• 2- Green Spring onions (chopped)
• 1/2 tsp – Pepper powder
• 1/4 tsp – White pepper powder
• Salt to taste
• 2 tbsp – Sesame oil.
Method:
- In a microwave bowl add rice and water with 1 tbsp – of oil and cook in the microwave oven on high for 20 minutes.
- Heat the sesame oil, minced ginger and minced garlic pieces in a microwave safe bowl for 5 mins on high.
- Then add the chopped carrots with soya sauce, chilli sauce, tomato ketchup and cook again for 5 mins.
- Then add the chopped spinach, pepper powder and salt (if needed), stir and cook for 2 mins until tender.
- Now remove the bowl from the microwave oven and combine the cooked rice, the white pepper powder and toss gently.
- Now add the finely chopped green spring onions and microwave for 2 mins again in the microwave oven.
- Mix everything.
- Serve hot with papads or boiled eggs.
