Ingredients:

• 2 cups – Basmati Rice
• 3.5 cups – Water
• 1 cup – Carrots chopped
• 1 cup – Spinach green (chopped finely)
• 1 tsp – Ginger pieces (minced)
• 1 tsp – Garlic pieces (minced)
• 1 tbsp – Dark soya sauce
• 1 tbsp – Chilli Sauce
• 1 tbsp – Tomato ketchup
• 2- Green Spring onions (chopped)
• 1/2 tsp – Pepper powder
• 1/4 tsp – White pepper powder
• Salt to taste
• 2 tbsp – Sesame oil.

Method:

  1. In a microwave bowl add rice and water with 1 tbsp – of oil and cook in the microwave oven on high for 20 minutes.
  2. Heat the sesame oil, minced ginger and minced garlic pieces in a microwave safe bowl for 5 mins on high.
  3. Then add the chopped carrots with soya sauce, chilli sauce, tomato ketchup and cook again for 5 mins.
  4. Then add the chopped spinach, pepper powder and salt (if needed), stir and cook for 2 mins until tender.
  5. Now remove the bowl from the microwave oven and combine the cooked rice, the white pepper powder and toss gently.
  6. Now add the finely chopped green spring onions and microwave for 2 mins again in the microwave oven.
  7. Mix everything.
  8. Serve hot with papads or boiled eggs.
