Ingredients:
• 1 bunch – fresh Spinach
• A handful – split moong dal
• 1 – medium onion, chopped
• 1 inch piece – ginger, julienned
• 4 Cloves – garlic, chopped
• Salt to taste
• 1 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 1 tsp – Garam Masala
Method:
- Pressure cook spinach and dal along with a cup of water and 1/2 tsp of salt for 10 mins.
- When pressure drops, mash the mixture well with the back of a spoon or a potato masher (do not use a food processor).
- The mixture should have a creamy consistency with a little bit of water left in it.
- Add a couple tablespoons cooking oil to a frying pan and fry the onions, garlic and ginger until golden.
- Lower the heat, add chilli powder, coriander powder, garam masala, stir for a few seconds, then add the spinach mixture.
- Check the salt and add more if needed.
- Stir over medium heat until the dish becomes creamy
- Serve.
