Ingredients:

• 200 g – paneer, grated
• 1/2 cup – Sugar
• 1/2 cup – Sugar
• 8 slices – bread
• 1/2 tsp – Cardamom powder
• Ghee
• For Rabri:
• 3 cup – Milk
• 25 g – plain khova, crumbled
• 1/2 tsp – Cardamom powder
• 1 tbsp – almonds, peeled and shredded
• 1 tbsp – pistachio, shredded
• Saffron a pinch
• Sugar to taste

Method:

  1. Mix paneer with sugar, sprinkle with 2 tbsp of water.
  2. Cook stirring on low flame till sugar melts and the mixture becomes a soft lump.
  3. Add cardamom powder.
  4. Trim the sides of bread slices.
  5. Sandwich the slices with paneer filling.
  6. Apply ghee on both sides of sandwiches and grill in a sandwich toaster till golden brown.
  7. Mix half a cup of sugar with half a cup of water.
  8. Cook stirring over low heat till the sugar is dissolved.
  9. Simmer gently for 2 mins.
  10. Arrange the sandwiches on a serving plate and pour the syrup on them.
  11. For rabri:
  12. Boil the milk and simmer till it is reduced to 2 cups.
  13. Add the khova and sugar.
  14. Cook for 2 mins.
  15. Add cardamom powder and saffron.
  16. Serve the sandwiches topped with rabri, garnished with almond and pistachio.
