
Ingredients:
• 1/2 kg – baby Potatoes
• 2 tbsp – Mint and Pumpkin seeds powder
• 1 tsp – coriander powder
• 1 tsp – Cumin seeds
• a few Curry leaves
• salt to taste
• oil as needed
Method:
- Cook the baby potatoes separately in water with enough salt until they turn soft. Peel the skin.
- Heat enough oil and fry the cumin seeds and curry leaves.
- Add the baby potatoes and saute for a few minutes.
- Add the mint and pumpkin seeds powder, coriander powder and salt and stir.
- Sprinkle some water and cook on medium flame until the potatoes get well roasted.
- Serve hot as a side dish.
