Ingredients:
• 250 gms – baby marrow, sliced
• 2 stalks – celery, sliced
• 30 ml – Chicken stock
• 4 portions – white fish
• 15 ml – toasted sesame seeds
• 4 – carrots, cut julienne
• 5 ml – chopped fresh Ginger
• Finely grated rind and juice of 1 Lime or Lemon
• 30 ml – fresh dill sprigs
• salt
• A pinch – black pepper
Method:
- Combine the vegetables in a large shallow microwave dish.
- Add the ginger, stock, lemon or lime rind and juice, salt and pepper and allow to stand for 5 minutes.
- Arrange lightly seasoned pieces of fish on top of the vegetables, sprinkle with dill and cover with vented plastic.
- Microwave on 100% power for 8-10 minutes or until fish is just tender.
- Sprinkle with sesame seeds and stand for 5 minutes.
- Serve each portion of fish generously topped with vegetables and extra dill.
