Ingredients:
• 4 potatoes, cut into wedges
• 3 spring onions, sliced (reserve 1 tbsp greens)
• 1 tsp – Sugar (or to taste)
• 2 tbsp – dark soy sauce
• 2 fresh red or green chillies, sliced
• Salt to taste (or 1/2 tsp)
• 175 ml – oil
• Extra 1 tbsp – oil
Method:
- Heat 175 ml oil in a wok and deep fry potato wedges till light brown. Drain and set aside on paper towels to absorb oil.
- Heat 1 tbsp of oil in another wok and add spring onions. Saute for a minute.
- Add sugar, soy sauce and salt. Mix well.
- Add the fried potatoes and sliced red or green chillies. Mix and cook for a minute.
- Garnish with spring onion greens and serve hot as a starter or side dish with noodles or fried rice.
