Ingredients:
• 10-12 florets – Cauliflower
• 10 – French beans (washed and chopped in slants)
• 3 – Carrots (washed and chopped in slants)
• 10-12 – button Mushrooms (cut into halves)
• 1 – large Potato (sliced)
• 1 – large Onion (sliced)
• 2 – Green chillies (finely chopped)
• 1 – large Tomato (finely chopped)
• 3 tbsp – Tomato ketchup
• 1/4 tsp – Red Chilli powder
• 1/4 tsp – Garam Masala powder
• Salt to taste
• Oil for frying and cooking
• 1 tbsp – Butter or margarine
Method:
- Boil water in a pan and add beans, carrots and peas to blanch them.
- Let them boil just for 2 mins, sieve them and wash them in cold water to maintain the texture.
- In the meantime, heat oil in a pan and fry cauliflower and potatoes by turn, till they turn golden brown.
- Keep aside the boiled and fried vegetables.
- Heat the butter in a skillet and saute mushrooms on high flame till golden brown.
- Take them out and in the same skillet pour 2 tbsp oil, heat it and add sliced onion, saute them till golden brown.
- Add tomatoes. Fry for another 2 mins.
- Mix all the vegetables, salt, chilli powder, garam masala powder and chopped green chillies.
- Cook them for another 2 mins.
- Add ketchup and cook for another minute.
- Best served hot with rotis or parathas.
