Ingredients:

• Rice – 1 cup.
• Kalkandu (rock sugar/ misri) – 1 cup
• Moong dal (optional) – 1/2 cup
• Ghee – 1 cup
• Milk – 2 cups
• For garnishing:
• Almonds – 6, sliced
• Cashew nuts – 25, split
• Raisins – 25
• Saffron -a few strings

Method:

  1. Boil milk and reduce it to half.
  2. Add washed rice and moong dal and pressure cook till they are completely boiled.
  3. Transfer the rice from the pressure cooker to a thick bottom vessel and add 1/2 cup ghee.
  4. Lower the flame, and little by little, add in the kalkandu, stirring continuously.
  5. Mix some saffron strings with lukewarm milk and add rice once the kalkandu starts dissolving.
  6. Add in the remaining of ghee slowly.
  7. Keep stirring till all the kalkandu is melted.
  8. Remove from stove.
  9. Roast some almond, cashew nuts and raisins in ghee to garnish the rice and serve hot.
