Ingredients:
• Rice – 1 cup.
• Kalkandu (rock sugar/ misri) – 1 cup
• Moong dal (optional) – 1/2 cup
• Ghee – 1 cup
• Milk – 2 cups
• For garnishing:
• Almonds – 6, sliced
• Cashew nuts – 25, split
• Raisins – 25
• Saffron -a few strings
Method:
- Boil milk and reduce it to half.
- Add washed rice and moong dal and pressure cook till they are completely boiled.
- Transfer the rice from the pressure cooker to a thick bottom vessel and add 1/2 cup ghee.
- Lower the flame, and little by little, add in the kalkandu, stirring continuously.
- Mix some saffron strings with lukewarm milk and add rice once the kalkandu starts dissolving.
- Add in the remaining of ghee slowly.
- Keep stirring till all the kalkandu is melted.
- Remove from stove.
- Roast some almond, cashew nuts and raisins in ghee to garnish the rice and serve hot.
