
Ingredients:
• 1 lbs – Spinach
• 1 packet – Tofu
• 1 – onion, medium size
• 1- tomato, medium size
• Red Chilli powder, to taste
• 1 pinch – Turmeric
• Salt to taste
• 1 pinch – Cumin seeds
• 2 flakes – Garlic (optional)
• Ginger – 1 small piece (optional)
• 2 tbsp – oil
Method:
- Wash the spinach thoroughly. Add garlic and ginger then let it boil for 5-8 mins or until its soft. Cool it and then grind to a fine paste along with the tomato.
- Heat oil in a pan and add cumin seeds. When its done, quickly add lengthwise chopped onions, fry them until it turns golden brown.
- Add little turmeric powder, chilli powder and salt. Then add the spinach-tomato paste.
- Add little water to give it a curry consistency. Let it cook for sometime.
- Cut tofu into small square pieces and finally add to the above prepared curry. Let it simmer for a while. Decorate it with coriander or mint leaves if needed.
