
Ingredients:
• 1 cup – thick Mango juice
• 1 cup – Sugar
• 1 cup – water
• 3/4 tsp – citric acid
• 1/8 tsp – potassium metabisulphite
Method:
- Put mango juice in a deep vessel.
- Heat for 2-3 minutes, stirring continuously.
- Take off and allow to cool.
- Meanwhile, put sugar and water to boil.
- When sugar is dissolved, simmer to make a syrup of one thread consistency.
- Take off fire, add citric acid and stir and dissolve.
- Add to mango pulp and stir to mix well.
- Dissolve KMS in half a tsp of water.
- Add to the mixture and stir well.
- Bottle in sterilised sauce bottles.
