Ingredients:

• 2 bunches – spring onions/scallions
• 1 – Egg (jumbo size)
• 3 tbsp – oil
• 1/4 tsp – Mustard Seeds
• 1/2 tsp – Cumin seeds
• Curry leaves, a few
• 1 tsp – chilli powder
• Salt to taste

Method:

  1. Wash the spring onions thoroughly in warm water. Chop them including the roots and shoots.
  2. Heat 1 tbsp oil in a pan. Add mustard seeds, and when they splutter, add cumin seeds and curry leaves.
  3. Now, add the chopped onions.
  4. Fry for a minute and then add the green shoots.
  5. Add salt, chilli powder and saute.
  6. Add eggs and fry for 4-5 minutes until it reaches a bhurji consistency.
  7. Add oil as you fry. It prevents the egg from sticking to the pan.
  8. Remove from fire and serve.
