Ingredients:
• 1 packet of instant noodles
• Onions – 2
• Green chillies – 4
• Ginger – 2
• Garlic -2 to 4 pods
• gram flour- 2 cups
• 1 tbsp oil,
• 1/4 tsp Mustard Seeds
• 3-4 curry leaves,
• salt,
• 1/4 tsp Sugar
• 1/2 tsp chilly powder
• 1/4 tsp Turmeric powder
• 1/2 tsp Cumin seeds
• 1/4 tsp Fenugreek seeds
• A tsp of Eno
Method:
- Heat 1 tbsp oil in a kadai, put in mustard seeds, curry leaves, cumin seeds, fenugreek seeds, onions, ginger and garlic (cut into small pieces).
- When brown, add the noodles along with its masala, fry a bit, add water, check for salt and cook till done.
- After it is done, keep it aside.
- In a bowl, take the gram flour, add water, green chillies, salt, a pinch of sugar and mix to form a nice thin batter.
- Add some cumin seed to this mixture too.
- Check for salt.
- Heat oil in a kadai, enough to fry the bhajis.
- Mix the noodles with the gram flour batter, just before frying add a spoon of Eno to the mix.
- Spoon out the mix with a tsp into the already hot oil and fry till it is nice and brown.
- After soaking out excess oil with tissues, place bhajis in a plate, sprinkle some chat powder on the hot bhajis and serve with tomato sauce, green chutney and tamarind chutney.
