Ingredients:

• 2 cups – mixed vegetable, stir-fried in 2 tsp – margarine
• For Walnut Sauce:
• 1 cup – low fat Yoghurt
• 70 g – walnut, coarsely ground
• 1/2 Clove – garlic, crushed
• 1 Egg white
• a dash – Red Chilli powder (optional)
• 1 tbsp – crumbled Cottage cheese
• 1 tsp – chopped red Capsicum
• 1 tbsp – finely chopped green Capsicum
• low fat salt to taste
• pepper to taste

Method:

  1. Combine walnuts, yoghurt, cheese, egg white, garlic and mint leaves in a saucepan, heat gently for 2-3 mins. Do not boil.
  2. Remove from heat, add salt, pepper, chopped red and green capsicum.
  3. Serve over stir-fried vegetables.
