Ingredients:

• 3/4 pound – mince Mutton
• 1/2 cup – onions, chopped fine
• 3 Clove Garlic large, minced
• 1 tsp – Mint dried
• 1 tsp – cumin ground
• 1/2 tsp – coriander ground
• 1/2 cup – Parsley fresh chopped
• pita bread
• Tomato chopped
• yogurt plain, non-fat preferably
• Cucumber chopped
• 1head Lettuce
• 1/4 tsp – pepper
• 1 tsp – salt

Method:

  1. Combine all ingredients.
  2. Using wet fingers and roll into balls about the size of an egg.
  3. Thread a skewer through each meatball and mould the mixture into a long finger shape along the skewer.
  4. Grill or broil gently. Be careful not to overcook so it will not be dry.
  5. Remove from skewers with Lebanese pita.
  6. Serve with, tomatoes, lettuce, yogurt on top of the Kafta as you wrap it all inside the Pita.
  7. To serve:
  8. Take soft pita bread.
  9. Cut a piece of bread from the Pita so that you can roll the bread around the Kafta (as in a blanket).
  10. Add tomatoes, cucumber, lettuce and a generous helping of yogurt on top of the Kafta and eat all together like you would eat a soft Tortilla shell.
  11. Enjoy this summer dish.
