Ingredients:
• 1 cup – Bengal Gram dal
• 1 – Onion (big size)
• 2 – Tomato (medium size)
• Curry leaves, small quantity
• Coriander leaves, small quantity
• Turmeric powder, small quantity
• 2 – Green chillies
• 1 cup – grated or shredded Coconut
• 2 tsp – Ginger
• 3 – Garlic
• Cumin seeds, small quantity
• Mustard, small quantity
• 2 tsp – chilli powder
• Oil for frying
• Salt to taste
Method:
- Soak Bengal gram dal for 3 hours. Grind adding very little water.
- Add chopped coriander leaves to the mixture and little salt. Fry them in oil as you do pakodas. Turn around and take them away while it is slightly brown.
- Grind ginger, garlic and make a paste.
- Grind green chillies and grated coconut and make it a paste.
- Heat oil in a kadai. Splutter mustard, cumin seeds, curry leaves, then fry onions, followed by tomatoes.
- Add little salt, turmeric powder, chilly powder and pour some water.
- Add the ginger paste and green chilly paste. Allow it to boil for some 10 minutes.
- Once it looks like gravy, add the broken pakodas into this and mix well.
- Vada curry can be served with idlis, dosas, chapattis and pooris.
